Pumpkin Pancakes by Chef Ron


Chef Ron Stuhm, PClll, is Harvest Table Culinary Group’s Executive Chef leading the team at New York University’s Third North Courtyard Cafe.. His Pumpkin Pancakes have become a local favorite, which is why we are sharing his signature recipe! We asked Chef Ron about this dish, and here’s what he had to say:

“I was inspired by one of my favorite and under celebrated holidays – Halloween! I love the smell of a fresh roasted pumpkin, so what a better way to utilize this seasonal ingredient than with a dish to start the day! The combination of the pumpkin pancakes, crème fraiche and fresh berries kick starts any person’s day.”



Servings: 8


  • 2 cups all-purpose flour
  • 2 Tb brown sugar
  • 1 Tb white sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp kosher salt
  • 1 cup roasted pumpkin, fresh
  • 2 Tb orange juice
  • 1 Tb orange zest
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • 1 each egg, beaten
  • 1 ½ cup buttermilk
  • 2 Tb vegetable oil, for the batter
  • 1 Tb vegetable oil, for the skillet


  1. Combine all dry ingredients together and whisk 2 minutes to aerate.
  2. Combine all wet ingredients together until incorporated. Add the wet ingredients into the dry ingredients being careful to NOT overmix.
  3. Place 1 Tb oil into the skillet and heat on medium heat. Add ¼ cup of pancake mixture to skillet. Cook 2 minutes on each side until golden brown.
